Brownie with Walnuts and Pistachios

Makes 16 pieces (about 2” x 2“ square)

Ingredients:
9 oz. (250g) bittersweet or semisweet chocolate, chopped
6 oz. (170g) unsalted butter
3/4 cup (6 oz. /170g) sugar
4 large eggs
½ cup (2 oz. /60g) all-purpose flour
½ cup (2 oz. /60g) almond flour or meal
1 cup (4 oz. /110g) walnuts, chopped
1 cup (4 oz. /110g) pistachios, chopped

  1. Preheat the oven to 350º F (175ºC), butter a 9-inch square baking pan and lightly dust it with flour or unsweetened cocoa powder.
  2. In medium-sized bowl set over a pan of simmering water (bain-marie), melt the chocolate and the butter. Remove from heat and set aside.
  3. In another medium-sized bowl, beat the sugar and the eggs until slightly thick and pale in color, then whip it into the chocolate mixture. Fold in the flour and almond flour. Mix in the nuts and pour batter into baking pan.
  4. Bake about 20-25 minutes. Let the brownies cool in the pan on a rack, then remove from the pan and cut into squares.
