I am not a big pancake fan but I love waffles… maybe because they are lighter and crisper. Waffles are easy to make, like pancakes, but they need one extra step to work best (folding in the egg whites). This time of the year, waffles are fantastic served with fresh berries and maple syrup.

I have been using an old Cuisinart waffle maker (a gift from a friend over 15 years ago).
It still works well after all these years.

Authentic Belgian Waffles with Fresh Berries

Ingredients
  1. 2 cups (300 grams) all-purpose flour, sifted
  2. 3 teaspoons baking powder
  3. ¾ cup (180 grams) granulated sugar
  4. 2 large eggs, separated
  5. 1 ½ cups whole milk
  6. ½ cup (4 ounces/110 grams) unsalted butter, melted, at room temperature
  7. 1 teaspoon pure vanilla extract
  8. Topping: fresh strawberries, blueberries, raspberries, blackberries, maple syrup, powdered sugar
Instructions
  1. In a medium-sized bowl, combine the flour, baking powder and sugar. In a large mixing bowl, beat egg yolks and then add the milk, butter and vanilla; mix well. Stir into dry ingredients just until combined.
  2. In another clean mixing bowl (not glass bowl), beat egg whites until stiff peaks form. Then, using a rubber spatula or wooden spoon, fold into the batter 1/3 of the whipped egg whites at a time.
  3. Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Serve with fresh berries, syrup and powdered sugar.
Notes
  1. For chocolate lovers: Make a quick chocolate sauce and drizzle over the waffles for an irresistible treat! Mix well about 4-ounces chopped chocolate into 1 cup of hot heavy cream until melted.
