Makes about 40 sandwich cookies

For Macaroons: 1⅓ cups (8oz./ 225g) whole blanched almonds, very fine ground or use almond flour 3 cups cups (13oz./350g) confectioners’ sugar ⅓ cup (30g) unsweetened Dutch-process cocoa powder 1 cup large egg whites (180g /from 6 whole eggs), at room temperature, must A pinch of salt A few drops of lemon juice 2 tablespoons granulated sugar

For Ganache filling: ⅔ cup (180g) heavy cream 2 tablespoons unsweetened Dutch-process cocoa powder 5 oz. (140g) bittersweet chocolate (65% to 70% cacao content), finely chopped ½ stick (2 oz./ 55g) unsalted butter, cut into ½-inch pieces

Equipment: a pastry bag fitted with a plain ¼-inch tip. Parchment paper

Preheat oven to 375° F(190°C) bake for about 10-112 minutes
